Abstract:
Tato bakalářská práce se zabývá problematikou naklíčených semen ve výživě člověka. Teoretická část definuje pojmy jako klíček, výhonek, osení a mikrozelenina a shrnuje technologické postupy klíčení semen jak v domácnosti, tak v provozech. The Bachelor thesis deals with the topic of germinated seeds in human diet. The theoretical part of the thesis defines terms like sprout, cereal-grass and microgreen and summarizes sprout processing. The theses brings and overview of nutritional benefits and microbial risks with main changes of nutrients and charakterization of the most common pathogens.
