Tato bakalářská práce se v teoretické části zabývá systémy, které jsou vhodné pro enkapsulaci aktivních látek. Zabývá se rovněž interakcemi mezi proteiny a polysacharidy, u kterých je možný vznik komplexů. Dále jsou charakterizovány i aktivní látky vhodné pro enkapsulaci do komplexů. In the theoretical part, this bachelor thesis deals with systems that are suitable for encapsulation of active substances. It also deals with interactions between proteins and polysaccharides where complex formation is possible. Active substances suitable for encapsulation into complexes are also characterized.
