The presence of phtalates in fruit distillates made in small distillery

Abstract:

Cílem práce bylo zmapování možné kontaminace ovocných destilátů v prostředí pěstitelské pálenice estery kyseliny ftalové v přímé linii výrobního procesu tj. od založení kvasu až po transport destilátu z pěstitelské pálenice. Teoretická část uvádí současný stav řešené problematiky v návaznosti na legislativu a možnou intoxikaci lidského organismu. Dále se zabývá výrobním procesem pěstitelského pálení a analýzou ftalátů metodami plynové chromatografie. V praktické části jsou podrobovány jednotlivé vzorky z různých fází technologického procesu analýze na možný výskyt ftalátů. Statisticky jsou vyhodnoceny hypotézy, které se zaměřují na faktory možného zvýšeného přenosu ftalátů v průběhu technologických operací do konečného produktu {--} ovocného destilátu. Závěr práce obsahuje doporučení k zamezení popř. omezení přenosu ftalátů do ovocných destilátů

Abstract:

The main goal of the final thesis was to map the possible contamination of fruit spirits in the environment of growers destillery with phthalic acid esters in a straight line production process, ie. from the ferment foundation to the spirit transport from the growers destillery. The theroretical part presents the current situation of the matter in relation to the legislation and possible intoxication of the human organism. It also deals with the production burning process of cultivation and analysis of the phthalates using gas chromatography. Main object of the practical part is the analysis of possible presence of phthalates in each sample taken from the different stages of the technological process. Hypothesis are statistically evaluated. These hypothesis focus on the potential factors which cause the increased transmission of the phthalates to the final product (fruit spirit) during technological process. In conclusion there are several recommendations for obstruction or prevention of phthalates transfer to the fruit spirits.
