Terroir - finding relationships between climatic, soil and growing conditions of the site and the quality of grapes and wine

Abstract:

Diplomová práce pojednává na téma Terroir – nalezení vztahů mezi klimatickými, půdními a pěstitelskými podmínkami stanoviště a kvalitou hroznů a vína. V katastru obce Perná, která se nachází v mikulovské podoblasti přímo pod Pálavskými kopci. Bylo vybráno 6 velmi ceněných tratí a na nich zkoumány kvantitativní parametru hroznů v průběhu dozrávání. Byla vybrána odrůda Ryzlink vlašský pro svůj jedinečný charakter, kterému dává vyniknout právě na Pálavě a jejím blízkém okolí. V Experimentální části diplomové práce se zaměřuji na měření hodnoty pH, cukernatosti, titrovatelných kyselin a asimilovatelného dusíku po dobu 2 let. Vzorky byly odebírány z více částí vinice a sledoval se charakter dozrávání hroznů. Nadále byly při posledním měření sklizeny vzorky pro výrobu vína. Vína byla ohodnocena pro své typické senzorické vlastnosti a sledovali jsme jejich rozdílnost při naprosto stejném způsobu zpracování. Abstract:

The thesis deals with the topic of Terroir - finding relationships between climatic, soil, and cultivation conditions of the site and the quality of grapes and wine. In the cadastre of the village Perná, located in the Mikulov subregion directly below the Pálava Hills, six highly esteemed vineyard plots were selected for the examination of quantitative grape parameters during ripening. The Riesling variety was chosen for its unique character, which shines particularly in the Pálava region and its immediate surroundings. In the Experimental part of the thesis, I focus on measuring pH value, sugar content, titratable acidity, and assimilable nitrogen over a period of 2 years. Samples were taken from multiple parts of the vineyard, and the ripening character of grapes was monitored. Additionally, samples for wine production were harvested during the final measurement. Wines were evaluated for their typical sensory properties, and we observed their differences with absolutely identical processing methods. We also explored possibilities for distinguishing vineyard plots based on the differences in their parameters. Keywords: terroir, Ryzlink vlašský, Perná
