The Role of Wine in the Czech Culinary Culture

Abstract:

Bakalářská práce se zabývá rolí vína v rámci české kulinární kultury. Cílem bakalářské práce je zjistit, jaké jsou postoje konzumentů k vínu jako součásti české gastronomie, a to včetně její nehmotné kultury. Výzkumná otázka zní: Jak se liší vnímání vína a piva v české gastronomii z pohledu českého konzumenta? Bakalářská práce obsahuje teoreticko-metodologickou, praktickou část a návrhovou část. V rámci teoreticko-metodologické části jsou definována odborná východiska zkoumané problematiky – historie vína, kulturně náboženské paradigma, české tradice spojené s vínem, gastronomie a gastronomická identita. V rámci praktické části, která má podobu strukturovaného dotazníkového šetření, je již analyzována role vína v rámci české kulinářské kultury. Návrhová část prezentuje doporučení, kterými je možné roli vína v rámci české kulinární kultury posilovat. Výzkum poukázal na to, že víno i pivo mají svébytné postavení v české kulinární kultuře, a že jsou nedílnou součástí české gastronomie. Zatímco u vína to, zda je součástí české gastronomie, nepatrně záviselo na věkové struktuře respondentů, u piva tyto rozdíly již patrné nebyly, což znamená, že bez ohledu na sociodemografické charakteristiky vnímají různí respondenti pivo jako nedílnou součást české gastronomie stejně. Preference konzumace piva a vína dle typů podniků či mimo podniky nebyla výrazně ovlivněna ani pohlavím a ani věkem či vzděláním. Obě pohlaví, jednotlivé věkové a vzdělanostní struktury respondentů spojují konzumaci vína přibližně se stejnými příležitostmi, a ani rituály spojené s vínem nejsou pohlavím, věkem a vzděláním respondentů zásadním způsobem ovlivněny. Žádná závislost nebyla potvrzena ani v případě vnímání vína jako součásti české kultury. Naopak role vína je pohlavím, věkem a vzděláním ovlivněna.

Abstract:

The Bachelor’s Dissertation deals with theme of wine and its role in Czech culinary culture. The aim is to explore the respondents´ attitudes to wine as a part of Czech gastronomy including its immaterial culture. Research question is: How do perception of wine and beer position vary in Czech gastronomy from the point of view of consumer? The text is divided into theoretical-methodological part, practical part and research proposals. In theoretical-methodological part the main basis of issue is mentioned – history of wine, culture-religious paradigm, Czech wine tradition, gastronomy and gastronomic identity. In practical part (questionary survey) there is the role of wine in Czech culinary culture analyzed. Research proposals present advices how to increase wine´s role in Czech culinary culture. Research pointed out, that wine and beer have the distinctive role in Czech culinary culture and it´s important part of Czech gastronomy. By the wine as a part of Czech gastronomy there is the dependence on age of respondents. By the beer as a part of Czech gastronomy there are no differences. It means that various respondents perceive the beer as a part of Czech gastronomy the same way, without regard to social-demographical factors. Preferences for consumption of wine and beer by the various types of businesses and outside of businesses are not influenced by sex gender, age and education. Various respondents with different sex gender, age and educations associate consumption of wine with the same opportunities. Rituals are not influenced by sex gender, age and education as well. There is no dependence on perception of wine as a part of Czech culture. The other way around the role of wine is influenced by sex gender, age and education.
