Developmental changes in the food and beverage menu

Abstract:

Tématem bakalářské práce jsou " Vývojové proměny v jídelním a nápojovém lístku. Cílem práce je analyzovat znalosti české veřejnosti o současných trendech a zjistit tak rozdíl o jejich povědomí mezi generacemi. Druhým cílem práce je zachytit vývojové proměny v nabídkových lístcích. Pro naplnění cíle byly zvoleny dvě metody. Metoda dotazníkového průzkumu a strukturovaného rozhovoru, na který navazuje deskripce restaurace a analýza jídelních a nápojových lístků z perspektivy vzhledové, obsahové a cenové. Bakalářská práce je rozdělena na tři kapitoly: teoretickou, analytickou a návrhovou. Teoretická část je zaměřena na pojmy týkající se jídelního a nápojového lístku. V této části jsou zmíněny nezbytnosti, které by měli být uvedeny v jídelním lístku. Dále jsou v práci zmíněny formy jídelních a nápojových lístků, struktura jídelních lístků a řazení kategorií v nich. Součástí teoretické části je také popis několika současných trendů v gastronomii. V analytické části je proveden dotazníkový průzkum, který vyhodnocuje znalost gastronomických trendů u dvou skupin generací. V analytické části je provedena deskripce restaurace U Tří Lipanů, která je doplněná o rozhovor s majitelem restaurace. V druhé části této kapitoly je provedena analýza nabídkových lístků této restaurace po stránce cenové, vzhledové a obsahové. Bakalářská práce je zakončena třetí návrhovou části. Tato část na základě získaných údajů přináší návrhy a doporučení pro propagaci nových trendů v jídelních a nápojových lístcích.

Abstract:

The topic of the bachelor thesis are "Developmental changes in the food and beverage menu“. The aim of the thesis is to analyze the knowledge of the Czech public about current trends and to find out the knowledge differences between generations. The other goal is to capture the developmental changes in the food and beverage menus. Two methods were used in order to fulfil the goals. The method of questionnaire survey and structured interview, which is followed by a description of the restaurant and analysis of the food and beverage menus from the perspective of appearance, content and price.The bachelor thesis is divided into three chapters: theoretical, analytical and design part.The theoretical part is focused on concepts related to the food and beverage menu. In this part there are mentioned the necessities which should be listed in the menu. Further, there are mentioned the forms of food and beverage menus, the structure of the menus and categories in them.There is also a description of several current trends in gastronomy.In the analytical part there is a questionnaire survey, which evaluates the knowledge of gastronomic trends in the two groups of generations. In the analytical part there is a description of the restaurant U Tří Lipanů, which is amended with an interview with the restaurant owner. In the second part of this chapter, an analysis of the menu of this restaurant is executed in terms of price, appearance and content. The bachelor thesis ends with the third design part. Based on the obtained data, this part brings suggestions and recommendations for the promotion of new trends in food and beverage menus.
