Gastronomic concept food truck focused on Czech gastronomy.

Abstract:

Food trucky jsou dnes čím dál tím oblíbenější mezi konzumenty. Zvýšení jak kvality, tak zpracování pokrmů ukázalo na fakt, že i venku na nohou se člověk může najíst nadmíru dobře, a přitom nemusí utratit hromadu peněz. Provozovatelé tohoto specifického odvětví gastronomie dokazují svou zručnost, kreativitu a lásku k jídlu, kterou se snaží předat dál. Cílem této bakalářské práce je navrhnout koncept pojízdné provozovny, která bude zaměřena na českou kuchyni. Teoretická část této práce definuje pojmy jako gastronomie a společné stravování, charakterizuje českou kuchyni a popisuje stravování v jednotlivých regionech. Součástí je také definice food trucku, popis tvorby jídelního lístku a následné kalkulace cen. Praktická část poté představuje sestavení konkrétní provozovny, včetně všech náležitostí a stanovení konkrétních produktů.

Abstract:

Nowadays, food trucks are becoming more and more popular among consumers. With the rising quality and preparation of meals one can state that even if it is outside standing, people can still enjoy remarkable food and save a lot of money. Operators of this specific gastronomic industry are proving their skilfulness, creativity, and love for food, which they are also trying to pass on. Main purpose of this bachelor thesis is to propose a concept of an establishment that will be focused on Czech cuisine. Theoretic part of this thesis defines terms such as gastronomy, collective dining and describes Czech cuisine in individual regions. Definition of a food truck, description of creating a menu, and a cost calculation follow are also explored in this section. The practical part of this thesis shows a possible composition of a particular establishment including administrative necessities and determination of specific products.
