The role of food styling in current eating habits

Abstract:

Diplomová práce pojednává o současných stravovacích návycích a jejích negativních vlivech, jakými jsou fast food, jídlo jako prožitek a přibližuje tzv. comfort food. Dále podává ucelený výklad o tom, jak výživa může pomoci zlepšit zdraví a bojovat proti nemocem, jako je obezita. V neposlední řadě přibližuje nové vědní disciplíny, jimiž jsou neurogastronomie a gastrofyzika, které poodkrývají, co a z jakého důvodu spotřebitelé konzumují a připomínají důležitost food stylingu a vizuální stránky pokrmu. Jejím hlavním cílem je zjistit, zdali nabyté poznatky z předešlé bakalářské práci o food stylingu vedou k efektivnější propagaci zdravějších pokrmů, což je doplněno vedlejším cílem, jenž pátrá po důvodech stojící za selekcí připravovaných pokrmů. Těchto cílů bude dosaženo prostřednictvím oční kamery a doplňujícího dotazníku. Za největší přínos praktické části je možné považovat zjištění, že food styling podpořil výběr zdravého pokrmu.

Abstract:

The diploma thesis discusses current eating habits and their negative influences such as fast food, food as an experience and describes comfort food. It also gives a comprehensive interpretation of how nutrition can help improve health and combat diseases such as obesity. Last but not least, it brings to mind the new scientific disciplines of Neurogastronomy and Gastrophysics, which reveal what and for what reason consumers consume and remind us of the importance of food styling and the visual aspect of the dish. Its main goal is to find out whether the lessons learned from a previous bachelor's thesis on food styling lead to a more effective promotion of healthier foods, which is complemented by a side objective that searches for the reasons behind the selection of prepared dishes. These objectives will be achieved through an Eye-tracking and a complementary questionnaire. The greatest benefit of the practical part can be considered the finding that food styling supported the choice of healthy food.
