Catering in small regional hospitals

Abstract:

Bakalářská práce pojednává o stravování v malých regionálních nemocnicích. V teoretické části jsou rozebrány formy stravování, základní složky stravy, dietní systém, který hraje velkou roli ve stravování, alternativní způsob stravování, poruchy výživy. Cílem je zjistit spokojenost pacientů, kvalitu jídel a rozsah nabídky jídel v obou nemocnicích. V analytické části se zaměřím na Masarykovu nemocnici v Rakovníku a Oblastní nemocnici Kladno. Charakterizuji obě nemocnice, interpretuji informace z řízených rozhovorů. Průzkum bude proveden pomocí dotazníkového šetření a řízeného rozhovoru se zdravotními sestrami a nutričními terapeutky. Výsledky obou metod analyzuji v této části. Následné vyhodnocení, které mi pomůže v závěrečné části navrhnout možné zlepšení v nemocnicích a přispět ke spokojenosti pacientů. Dotazník vyplnilo 107 respondentů v Masarykově nemocnici a 88 respondentů v okresní nemocnici Kladno. Velkým zjištěním pro mě bylo, že v kladenské nemocnici používají umělohmotné tablety. Překvapilo mě, že zdravotní sestry nemají přístup do nemocniční kantýny a musejí si vařit samy.

Abstract:

The Bachelor´s work discusses about catering in smal regional hospitals. The forms of catering, basic ingredients of food, diet system (which has an important role in the catering), alternative way of catering, nutritional disorders and hygiene are being analyzed in the theoretical part. The aim is to find out satisfaction of patients, food quality and range of meal offers in both hospitals. I will focus on Masaryk hospital in Rakovník and regional hospital in Kladno in the analytical part. It characterizes both hospitals. The survey will be done using questionnaire and structured interview with the nurses. I will analyze the results of both methods in this part. Followed by evaluation which will help me to suggest the possible improvement in the hospitals and to contribute to patient satisfaction, in the final part. The survey was filled in by 107 respondents in Masaryk hospital and 88 respondents in regional hospital in Kladno. What suprised me the most was that in hospital in Kladno they use plastic tablets for serving the meal to the patients. Also I was suprised that nurses do not have access to the canteen in the hospital and have to make their own meal.
