A systematic approach to the valuation of industrial grills

Abstract:

Cílem práce je návrh metodiky pro stanovení zbytké užitnosti průmyslových grilů. Pozornost je věnována teoretickým podkladům, na základě kterých je metodiky navržena. Byla provedena literární rešerše, která zahrnovala analýzu různých druhů a typů průmyslových grilů včetně plynových, elektrických, grilů na dřevěné uhlí, infračervených grilů a kombinovaných grilů. Práce také obsahuje analýzu dat charakterizujících servisní náklady, závěry této analýzy jsou zohledněny při oceňování grilu. Výstupy práce mají potenciál pro provozovatele restauračních zařízení, v případě potřeby ohodnotit současnou hodnotu grilu a stanovit rozhodnutí o případné opravě či koupi nového zařízení.

Abstract:

The aim of the work is to propose a methodology for determining the residual usefulness of industrial grills. Attention is paid to the theoretical basis on which the methodology is proposed. A literature search was conducted which included an analysis of different types and types of industrial grills including gas, electric, charcoal, infrared and combination grills. The work also includes an analysis of data characterizing service costs, the conclusions of this analysis are considered in the pricing of the grill. The findings of the thesis have the potential for restaurant operators to assess the current value of a grill and determine decisions on the possible repair or purchase of new equipment, if necessary.
