The use of Aromatic Plants in Wine Production

Abstract:

Použití léčivých, aromatických a kořeninových rostlin je známé již dávno před naším letopočtem. Tyto rostliny ovlivňují nejen chutě, ale i aromatické vjemy jídel. Možnosti, jak získat významné užitečné látky z těchto rostlin, je celá řada, například macerace, vylouhování, pomocí nálevu, extrahováním a dalších. Cílem práce bylo zjistit, zda vybrané aromatické rostliny ovlivní celkový charakter vín s běžnými vadami. Pro tuto práci byly vybrány tři velmi aromatické rostliny: blahovičník neboli eukalyptus, levandule a maří list. Pro experiment byly vybrány dvě vína s běžnými vadami (lehce přesířené a lehce naoxidované). Potřebný hydrolát byl získán destilací. Získaný hydrolát byl použit do 0,75 l vína s množstvím 10,5 ml hydrolátu. V pravidelných intervalech (okamžitá degustace, týdenní, měsíční) byla vína senzoricky hodnocena. Ze senzorického hodnocení vyplývá, že nejvíce u obou vadných vín byl pozměněn charakter s použitím hydrolátu bíle kvetoucí levandule, naopak nejméně se jevil blahovičník. Závěrem lze konstatovat, že použitím hydrolátů u všech tří rostlin ovlivnil celkový charakter vína.

Abstract:

The use of medicinal, aromatic and spice plants has been known since ancient time. These plants influence not only flavors but also the aromatic perceptions of foods. These are various methods to extract significant beneficial compounds from these plants, such as maceration, infusion, decoction, extraction and others. The aim of this study was to determine whether selected aromatic plants would influence the overall character of wines with common defects. Three highly aromatic plants were chosen for this study: lemon scented gum, lavender and costmary. Two wines with common defects (slightly over sulfured and slightly oxidized) were selected for the experiment. The necessary hydrolate was obtained through distillation. The obtained hydrolate was added to 0,75 l of wine at a quantity of 10,5 ml of hydrolate. The wines were sensory evaluated at regular intervals (immediate tasting, weekly, monthly). The sensory evaluation indicated that the character of both defective wines was most altered when using the hydrolate of white-flowered lavender, whereas lemon scented gum appeared to have the least effect. In conclusion, the use of hydrolates from all three plants influenced the overall character of the wine.
