Abstract:

Bakalářská práce se soustřeďuje na problematiku stravování v nemocnicích z pohledu firemního stravování. Objekt, který jsem si zvolila pro analýzu této problematiky je stravovací provoz ve Fakultní nemocnici Královské Vinohrady, která se nachází v Praze. Práce pojednává o nynějším stavu spokojenosti strávníků se stravovacími službami v této nemocnici. Cílem práce je analýza spokojenosti strávníků s kvalitou poskytovaných gastronomických služeb v této nemocnici. Stanovila jsem dvě hypotézy. První hypotézou předpokládám, že více jak 70% strávníků je spokojeno s rozsahem nabídky pokrmů. Druhou hypotézou předpokládám, že je více jak 60% strávníků spokojeno s chutí a kvalitou pokrmů. Metodu pro výzkum jsem zvolila dotazníkové šetření mezi zaměstnanci, mediky a návštěvníky, kteří stravovací zařízení navštěvují. Následně proběhlo vyhodnocení šetření a na základě jeho výsledků byly zhodnoceny hypotézy. Ze zhodnocených výsledků vyplynulo, že 77% strávníků je spokojeno s rozsahem nabídky pokrmů, takže hypotéza byla na tomto základě přijata. Druhá hypotéza musela být vyvrácena, neboť pouze 49% strávníků je spokojeno s chutí a kvalitou pokrmů. V návrhové části jsem interpretovala návrhy či připomínky od samotných strávníků a na základě jejich kritiky jsem návrhovou část rozdělila do tří skupin. Vytvořila jsem návrhy s doporučeními na vylepšení nebo úplné odstranění daných problematických částí v tomto stravovacím provozu. Návrhy by mohly pomoci ke zlepšení celkové spokojenosti strávníků se stravovacím zařízením v dané nemocnici.

Abstract:

Bachelor thesis Specifics in providing meals in hospitals concentrates on the issues of eating in the hospitals from the perspective of corporate eating. As an object of our research of these issues has been chosen catering operation in the „Fakultní nemocnici Královské Vinohrady“ which is located in Prague. Thesis refers about situation of boarder´s satisfaction of eating services in this hospital. Main target of thesis is an analysis of boarder´s satisfaction with quality of provided gastronomic services in this hospital. I have defined two hypotheses based on main targets of thesis. First hypotheses leads to the result that more than 70% of boarders are satisfied with range of offered meals. Second hypothesis claims that more than 60% of boarders are satisfied with taste and quality of meals. The selected method for research has been questionnaire survey among the employees, medical students and visitors who attend this institution. Subsequently it has been the evaluation of questionnaires of which results were criterion for rejection or acceptance of hypothesis. The evaluation of hypotheses has revealed that more than 70% of boarders are satisfied with the range of meal offer and It has been figured out that less than 60% of boarders are satisfied with taste and quality of meal. Based on these results the first hypothesis could be accepted and the second has been rejected. In the proposal part of thesis, which I am interpreting proposals and remarks from boarders. Based on this criticism I have divided my proposal part into three sections. I have created proposals and recommendations to improve situation and completely eliminate the problem parts of this catering operation. These proposals could help to improve overall satisfaction of boarders with eating arrangement in this hospital.
