Microorganisms in organic food and monitoring influences in the production of raw foods

Abstract:

Tato práce se zabývá výskytem mikroorganismů v biopotravinách a minimálně tepelně opracovaných potravinách. V teoretické části jsou popsány alternativní směry výživy se zaměřením na vitariánství a biopotraviny. Dále jsou popsány suroviny použité na výrobu sušenek a skupiny mikroorganismů, které byly v práci stanovovány. V experimentální části je popsána výroba jednotlivých variant "raw" sušenek a provedení mikrobiologických rozborů dle platných ČSN ISO norem. V práci je sledován vliv teploty na přítomnost mikroorganismů. Získané výsledky jsou diskutovány a porovnány s odbornou literaturou.

Abstract:

The thesis is focuses on the presence of microorganisms in organic food and in minimally heat-processed food. In theoretical part there is a description of alternative ways of nutrition with focus on vitarianism and organic food consumption. Next part described raw materials used for cookies samples and after that there are described groups of microorganisms which were determinated in thesis. Experimental part follows up about production of particular variants of "raw" cookies and execution of microbiological analyses according to valid ČSN ISO standards. In thesis there is observation of influence of temperature towards the presence of particular microorganisms. Obtained results are discussed with refferences.
