Abstract:

Tato bakalářská práce popisuje vliv akrylamidu na organizmus člověka. Zabývá se jeho vznikem v potravinách, jeho použitím v průmyslu a v laboratořích. Také popisuje nejrizikovější skupiny potravin a možnosti ovlivnění formace akrylamidu v potravinách. Dále se věnuje předpokládané karcinogenitě akrylamidu a shromažďuje dosud získaná data ze studií na zvířatech a lidech. Součástí této práce je i praktická část, která zjišťuje informovanost osob na téma akrylamid a jejich stravovací návyky, zaměřené na rizikové potraviny z hlediska formace akrylamidu.

Abstract:

This bachelor’s thesis describes the effects of acrylamide on human organism. It deals with its formation in foodstuffs, its use in the industrial sphere and in laboratories. It also describes the high risk food groups and possible ways of affecting acrylamide formation in foodstuffs. Further, it explores the potential carcinogenity of acrylamide and compiles the data acquired from the studies of animals and humans. Also, this work contains a practical part which investigates the consumers’ awareness of acrylamide and their food habits, focusing on the risk foods from the perspective of acrylamide formation.
