Diplomová práce se v teoretické části zabývá charakteristikou antokyanů a soustředí se na jejich stabilitu a biologickou aktivitu. Dále podrobně rozebírá Amesův test, jeho vývoj a varianty, které jsou využívány pro screening genotoxicity látek. Abstract:
The theoretical part of the thesis deals with the characteristics of anthocyanins and focuses on their stability and biological activity. The Ames test, its development and variants used for genotoxicity testing of substances are also discussed in detail.
