Possibilities and development of eco-friendly catering

Abstract:

This Bachelor´s Dissertation deals with the importance of ecologically oriented catering and its further development. The aim of the bachelor´s dissertation was to find out what position the ecologically oriented catering has on the market and whether it is able to compete with other catering companies. The first part is devoted to theoretical knowledge of basic concepts such as gastronomy, healthy nutrition, the importance of catering but also the ecology in gastronomy itself. In the analytical part, I looked at the issue of ecologically oriented catering by means of questionnaire, designed especially for people living in Prague. I also made an interview with the representatives of two catering companies to find out their own view on this topic. Both hypotheses have been confirmed. Clients of catering companies are really interested, what is the enviromental impact of catering. The people also accept higher prices for services provided by catering companies if they are caused by increased costs of more environmentally friendly products. In conclusion, based on the information obtained and my own observations, I present suggestions and measures that would lead the catering companies to a more environmentally friendly way of doing catering business.

Abstract:

Táto bakalárska práca sa zaoberá významom ekologicky zameraného cateringu a jeho ďalším vývojom. Cieľom bakalárskej práce bolo zistiť, aké má ekologicky zameraný catering postavenie na trhu a či je schopný konkurovať ostatným cateringovým spoločnostiam. Prvá časť je venovaná teoretickým poznatkom o základných pojmoch, ako je gastronómia, zdravá výživa, význam cateringu ale aj samotnej ekológií v gastronómií.. V analytickej časti som pomocou dotazníka určeného najmä ľuďom žijúcim v Prahe a rozhovoru s dvoma predstaviteľmi cateringových společnosti nazrela na problematiku ekologicky zameraného cateringu z oboch strán. Boli potvrdené obe moje hypotézy. Klientov cateringových spoločností naozaj zaujíma aký vplyv má catering na životné prostredie a taktiež ľudia akceptujú vyššie ceny služieb cateringových spoločností, ak sú vyvolané zvýšenými nákladmi na produkty šetrnejšie k životnému prostrediu. V závere na základe získaných informácií a vlastných postrehov uvádzam návrhy a opatrenia, ktoré by viedli cateringové společnosti k ekologickejšiemu spôsobu podnikania.
