Supply and quality of gastronomic service in a big hotel

Abstract:

Hlavním cílem bakalářské práce je popsat gastronomickou nabídku a kvalitu poskytovaných služeb v hotelu Clarion Congress Hotel Prague. Vedlejším cílem je navrhnout zlepšení, která by vedla k vyšší úrovni poskytovaných služeb. V práci je použito dotazníkové šetření hotelu a forma Mystery shopping. Práce je zpracována do tří částí. V první části jsou vysvětleny základní pojmy, které se týkají hotelu. Největší prostor věnuji stravovacímu úseku, kde uvádím odbytové části hotelu, základní stravovací služby a společenské události. Je také popsán systém řízení kvality. Druhá část je zaměřena na gastronomickou nabídku F&B úseku a kongresového a banketního úseku v hotelu Clarion Congress Hotel Prague. Součástí analytické části je také řízení kvality služeb, kde popisuji jednotlivé standardy, normy a školení pracovníků. Velmi důležitým bodem je zpětná vazba od hotelových hostů. Pro zhodnocení spokojenosti se stravovacími službami hotelu použiji online servery Booking.com a TripAdvisor. Následně je použita metoda Mystery shoppingu a souhrn otázek, na základě kterých je provedena kontrola nad standardy a kvalitou služeb v hotelovém restauračním zařízení. Ve třetí části práce jsou využity poznatky z analytické části, kde navrhuji jistá zlepšení, která by vedla k vyšší úrovni poskytovaných služeb.

Abstract:

The main objective of this thesis is description of gastronomic offer and quality of services supplied in Clarion Congress Hotel Prague. The secondary objective is to suggest improvements that would lead to higher level of offered services. The methods used in this thesis are questionnaire survey and Mystery shopping. The thesis is divided into three parts. The first part contains explanations of basic terms concerning to the hotel. I give the most space to food and beverage department, where I present sales parts of the hotel, basic catering services and social events. There is also description of system of quality management. The second part is aimed to the gastronomic offer of F&B section and Congress and Banquet section in Clarion Congress Hotel Prague. In the analytical part there is also quality management of services, where I describe particular standards, norms and staff training. One of the key points is hotel guests’ feedback. I use online sources Booking.com and TripAdvisor for valuation of satisfaction with services. Afterwards there are Mystery shopping method and file of questions used. On this basis the control of standards and quality in the hotel restaurant is made. In the third part there are results from the analytical part used and I suggest some improvements to increase the level of services’ quality there.
