Abstract:

ŠANDA, jan.Komparace tradičních a novodobých pivních restaurací v Praze.[Bakalářská práce] Vysoká škola hotelová. Praha: 2015. Celkový počet stra :54 Bakalářská práce se zabývá tématem komparace tradičních a novodobých pivních restaurací v Praze. Cílem práce je komplexní shrnutí dané problematiky, demonstrace vývoje gastronomie a pivovarnictví a posouzení vlivu moderních trendů na současný stav pivních restaurací, zhodnocení jejich rozdílů a srovnání jednotlivých typů. Práce počíná teoretickým úvodem zahrnujícím typologii restauračních zařízení a historii vaření piva ve světě i v českých zemích, a dále v praktické části pokračuje podrobným průzkumem devíti vybraných pražských pivních restaurací tří různých typů. The main topic of this Bachelor thesis is the comparison of traditional and modern beer restaurants in Prague. The aim of this thesis is a complex summary of this issue, development demonstration of gastronomy and brewing, assessment of the impact of modern trends on the current situation in the field of beer restaurants and evaluation and comparison of the differences of each type. The theoretical part of this thesis briefly describes the typology of restaurants and the history of brewing in the world and in Czech lands. This part is followed by a practical one that consists of a detailed survey of nine selected Prague beer restaurants that represent three different types.
