Analysis of Italian gastronomy in the Czech Republic

Abstract:

Anotace Práce ukazuje rozdíly mezi kuchyní v Itálii a vařením v italských restauracích v ČR a úroveň jejich přizpůsobení se zákazníkům. Zároveň zkoumá chutě a vkus českých zákazníků a popisuje charakteristiku úspěšných italských restaurací v ČR. Práce je rozdělena do tří částí, z nichž první poskytuje přehled italské kuchyně včetně regionálních charakteristik, typických ingrediencí a tradičních receptur. Druhá část práce popisuje hypotézy, výzkumné metody a výsledky. Závěrečná část pak shrnuje a uzavírá výzkum a podává návrhy na zlepšení.

Abstract:

Annotation The theses points at the differences between real Italian cuisine and cooking in Italian restaurants in the CR and the extent to which they adjust to Czech customers. It also enquires into their customers‘ tastes and describes typical qualities of successful Italian restaurants in the CR.The thesis is divided into three parts, the first of which provides an outline of the Italian cuisine including regional characteristics, typical ingrediences and traditional recipes. The second part describes the hypotheses, the research methods, the research in itself and its results. The final part summarizes and concludes the research and provides suggestions for improvements.
