Diplomová práce popisuje v teoretické části mlékárenský průmysl a ekonomiku a technologii zpracování mléka. Mlékárenský průmysl je významnou složkou národního hospodářství. V praktické části jsem vypočítával konečnou cenu u jednotlivých výrobků, zdali se vyplatí, rentuje výroba při určitém množství vyráběných kusů jogurtů při šetrné a nízké pasteraci. The thesis describes in the theoretic part the dairy industry and the economy and the tech-nology of processing milk. The dairy industry is an important component of the national economy. In the practical section, I was figuring the final price of particular products. I was also examining whether the production of yoghurts made using gentle and low pasteurizati-on is profitable.
