Abstract:
Tato bakalářská práce se zabývá problematikou hygieny potravin. Jsou zde popsány jednotlivé druhy kontaminace potravin a alimentární nákazy, které mohou způsobovat. Dále jsou zde řešeny kroky k udržení správné hygieny v jednotlivých fázích oběhu potravin a příslušná legislativa. Bakalářská práce je rozdělena do dvou částí. This bachelor's thesis is related to food hygiene. There are certain types of food contamination and disease, described in the thesis which they could caused. There are also sketched in ways of hygiene control in food industry on national, European and international level. Bachelor's thesis is divided into 2 parts - theoretical and practical.
