Tato bakalářská práce se zabývá antioxidačními vlastnostmi mléka a mléčných výrobků a formou literární rešerše přináší teoretický přehled o antioxidační aktivitě a kapacitě, o volných radikálech a oxidačním stresu. This bachelor thesis deals with the antioxidant properties of milk and dairy products and presents a theoretical overview of antioxidant activity and capacity, free radicals and oxidative stress in the form of a literature research.
