Abstract:
Teoretická absolventská práce se věnovala zkoumání relevantních zdrojů k získání vhodných souhrnných informací o nutričním složení masa, a to v širokém spektru. Zabývala se masem, tedy potravinovými surovinami živočišného původu (kosterní svalovinou), jako stále zásadním zdrojem jídelníčku člověka.
