Abstract:

LUZERTOVÁ, Nela. Označování alergenů u pokrmů v České republice. [Diplomová práce] Vysoká škola hotelová. Praha: 2018. 86 stran. Diplomová práce se zabývá označováním alergenů u pokrmů, které jsou servírovány v provozovnách společenského stravování a jejich kontrolou státními institucemi v České republice a Polské republice a jejich vzájemná komparace. Teoretická část se věnuje zákonu a nařízením, které ukládají provozovnám uvádění alergenů u své nabídky pokrmů. Dále se zabývá alergií na potraviny, popisuje projevy alergie, způsoby diagnostiky a možnou léčbu. Jsou zde detailněji popsány potraviny, které jsou stanoveny v Příloze II. nařízení Evropského parlamentu a Rady č. 1169/2011 o poskytování informací o potravinách spotřebitelům. Další část je věnována dotazníkovému šetření, které se uskutečnilo v provozovnách společného stravování v Českém Těšíně a Cieszyně. Přičemž na polské straně města byl při rozhovorech přítomen překladatel. Také jsou zde uvedeny výsledky kontrol Státní zemědělské a potravinářské inspekce za dobu účinnosti nařízení Evropského parlamentu a Rady. Praktická část zahrnuje výsledky dotazníkového šetření, které se zabývalo komparací uvádění alergenů a kontroly státními institucemi v Polské republice a České republice. Klíčovým zjištěním bylo ignorování dodržování zákonů ze strany provozovatelů potravinářských podniků, stejně jako nedostatečná kontrola ze strany státu. Poslední část diplomové práce se zabývá návrhy, jak zlepšit informovanost spotřebitelů v oblasti alergenů a alergenních látek, které jsou obsaženy v konzumovaných pokrmech a potravinách. Dále popisuje návrh na zlepšení metodiky kontrol Státní zemědělské a potravinářské inspekce České republiky. Cílem této diplomové práce je zjistit a zhodnotit, zda kontroly státními institucemi jsou prováděny dostačujícím způsobem a zda zavedení nového nařízení pro provozovny společného stravování bylo nutné či nikoliv.

Abstract:

LUZERTOVÁ, Nela. Labeling of Allergens in Foods in the Czech Republic. [Master´s Dissertation] The Institute of Hospitality Management. Prague: 2018. 86 pages. This diploma thesis deals with the labeling of allergens for meals which are served in restaurant establishments and their control by the state institutions in the Czech Republic and the Republic of Poland and their mutual comparison. The theoretical part deals with the law and regulations that impose on businesses to put proper label of allergens for their food supply. It also deals with food allergy, describes allergy symptoms, diagnosis methods and possible treatment. The foods specified in Annex II are described in more detail here. Regulation (EC) No 1169/2011 of the European Parliament and of the Council on the provision of food information to consumers. The next part is devoted to the questionnaire survey, which took place at the restaurant establishments in Český Těšín and Cieszyn. On the Polish side of the city, a translator was present during the interviews. The results of the inspections of the Czech Agriculture and Food Inspection Authority are also presented here for the duration of the Regulation of the European Parliament and of the Council. The practical part includes the results of the questionnaire survey, which deals with the comparison of allergens and control by state institutions in the Republic of Poland and the Czech Republic. The key finding was the ignorance of compliance by food business operators, as well as insufficient control by the state. The last part of the diploma thesis deals with suggestions on how to improve consumer awareness of allergens and allergenic substances contained in consumed food. It also describes the proposal to improve the methodology of inspections of the Czech Agriculture and Food Inspection Authority of the Czech Republic. The aim of this diploma thesis is to find out and evaluate whether inspections by state institutions are being carried out adequately and whether the introduction of a new regulation for catering establishments was necessary or not.
