Závěrečná práce se zabývá kmínem kořenným (Carum carvi L.), především obsahovými látkami jako je obsah silice a jeho využití v potravinářství, potažmo ve kvasném průmyslu. Práce se také zabývá potencionálním zužitkováním antioxidačních, antimikrobiálních a antimykotických vlastností kmínu v potravinářských výrobcích. The aim of this bachelor's thesis is caraway (Carum carvi L.), mainly its essential oil content and its use in the food industry, especially in the fermentation industry.
