Abstract:

STRÁNSKÁ Veronika, Podnikatelský plán na založení židovské restaurace. [Diplomová práce] Vysoká škola hotelová v Praze 8, spol. s.r.o. Praha: 2017 s. 90 Tato diplomová práce je zpracovaný podnikatelský plán na založení židovské restaurace. Součástí plánu je vybraná lokalita provozovny, zpracovaný jídelní lístek dle zásad kašrůtu a moderní židovské gastronomie. Jídelní lístek obsahuje také ceny jednotlivých pokrmů a nápojů včetně nákladů na suroviny a marži. Dopodrobna je zanalyzována konkurence a detailně rozepsány jednotlivý dodavatelé kosher surovin, jelikož jejich pečlivý výběr musí být v souladu s průvodcem kosher potravinami 2016/2017 vydaným pražským rabinátem. V podnikatelském plánu nejsou opomenuti ani zaměstnanci jako důležitá součást podniku. Zaměřila jsem se také na marketing a reklamu, kterou považuji za klíčovou pro úspěch v podnikání. V plánu je rozklíčován finanční plán, který obsahuje tři varianty optimistickou, reálnou a pesimistickou a mimo jiné i body zvratu a vývoj nákladů a tržeb v podobě grafů. V závěru práce je SWOT analýza a analýza rizik, které podnik mohou ohrozit.

Abstract:

STRÁNSKÁ Veronika, Business Plan for the Establishment of a Jewish Restaurant. [Master’s Dissertation] The Institute of Hospitality Management in Prague 8, Ltd.: 2017. s. 90 This diploma thesis concern processing establishment of a Jewish restaurant with use of relevant business plan. Part of the thesis contains selected location of the facility, a processed menu according to the principles of kašrút and modern Jewish gastronomy. The menu also includes the prices of individual meals and beverages, including raw material and margin. Business plan include detailed analysis of competition and detail list of the kosher raw materials suppliers, as their careful selection must be in accordance with the Kosher Food Guide 2016/2017 issued by the Prague Rabbinate. The business plan does not neglect employees either as they are an important part of the business. I also focused on marketing and advertising that I consider as key to success in business. The thesis outlines a financial plan that includes three financial variants: optimistic, realistic and pessimistic, and among the already mentioned also include, the reversal points, the development of cost and revenue in the form of graphs. The end of the thesis contains a SWOT analysis and analysis of risks that can threaten the company.
