World cheese production and their pairing in gastronomy

Abstract:

Tato bakalářská práce se zabývá současnou světovou produkcí sýrů a jejich párováním. Poskytuje ucelený přehled o výrobě a párování sýrů se zaměřením na teoretické a praktické aspekty tohoto tématu. Teoretická část práce se zabývá historií sýrů, včetně jejich vzniku a vývoje, nutričními hodnoty a zdravotními výhodami a nevýhodami. Následně poskytuje podrobný rozbor různých druhů sýrů a výroby. Dále se zabývá uměním párování sýrů, včetně zásad a způsobů párování. V praktické části se pracuje s informacemi získanými v teoretické části. Za pomoci dotazníkového šetření jsou zjišťovány postoje a preference respondentů k sýrům a jejich párování, přičemž vzorek byl vybrán z České republiky. V další části je uvedeno vyhodnocení získaných dat a výsledky průzkumu jsou porovnány s dostupnými studiemi o párování sýrů. V závěru práce je na základě výsledků průzkumu a vyhodnocení dat navrženo sýrové degustační menu.

Abstract:

This bachelor thesis deals with the current world cheese production and pairing, providing a comprehensive overview of cheese production and pairing, focusing on the theoretical and practical aspects of this topic. The theoretical part of the thesis deals with the history of cheese, including its origin and development, nutritional value and health advantages and disadvantages. It then provides a detailed analysis of different types of cheese and production. It also discusses the art of cheese pairing, including the principles and methods of pairing. The practical part works with the information obtained in the theoretical part. The attitudes and preferences of the respondents towards cheese and cheese pairing are investigated by means of a questionnaire survey, and the sample was selected from the Czech Republic. Furthermore, an evaluation of the obtained data is presented and the results of the survey are compared with available studies on cheese pairing. The paper concludes by proposing a cheese tasting menu based on the survey results and data evaluation.
