Abstract:
Bakalářská práce se zabývá izolací mikroorganismů degradujících biogenní aminy z fermentovaných výrobků. Teoretická část zahrnuje popis biogenních aminů, jejich cha-rakterizaci, výskyt a význam v potravinách a popis mikroorganismů degradujících bio-genní aminy. The aim of this bachelor thesis is the isolation of biogenic amines degrading microorgan-isms from fermented meat products. The theoretical part describes the biogenic amines, their characterization, occurrence and importance in food and the description of microor-ganisms degrading biogenic amines.
