Preparation and Properties of Emulsion Gels Based on Cellulose Nanocrystals and Sodium Caseinate

Abstract:

Diplomová práce je zaměřena na přípravu emulzních gelů z Pickeringových emulzí stabilizovaných dvěma typy částic, a to nanokrystalickou celulózou (CNC) a kaseinátem sodným (CAS). Teoretická část se zabývá obecnými charakteristikami emulzí, jejich vlastnostmi a přípravou. Dále zpracovává tematiku stabilizujících částic, jejich fyzikálně-chemických vlastností a využití. V poslední kapitole je přiblížena problematika přípravy a použití emulzních gelů (oleogelů). Praktická část práce je věnována přípravě CNC a CAS disperzí následně využitých k formulaci emulzí a oleogelů, jejichž dispergovanou fázi tvoří hexadekan a olivový olej. Připravené emulze byly charakterizovány pomocí měření velikosti a distribuce emulzních kapek, mikroskopií, a sledováním jejich dlouhodobé stability. U výsledných oleogelů pak bylo analyzováno množství uvolněného oleje a byly stanoveny jejich viskoelastické vlastnosti.

Abstract:

The diploma thesis is focused on the preparation of emulsion gels based on Pickering emulsions stabilized with two types of particles, namely nanocrystalline cellulose (CNC) and sodium caseinate (CAS). The theoretical part of the work concentrates on the emulsions, their properties and preparation, and introduces also stabilizing particles, their physico-chemical properties and applications. In the last section, the preparation and principal characteristics of emulsion gels (oleogels) are presented. The experimental part of the thesis describes preparation of CNC and CAS dispersions, which are subsequently used for the formulation of emulsions and oleogels with dispersed phase consisting of hexadecane and olive oil. The emulsions are then characterized by measuring size and distribution of their emulsion droplets, microscopy, and by monitoring their long-term stability. The resulting oleogels are analysed for the amount of oil released, and their viscoelastic properties are determined.
