Food and beverage management measures with a purpose to increase and improve quality of food service, to achieve the higher demand of food service

Abstract:

Diplomová práce je zaměřená na restauraci hotelu Pratol*** v Říčanech u Prahy. Primárním cílem práce je prozkoumat stravovací úsek konkrétního hotelu, odhalit problémové úseky hotelové restaurace a nabídnout řešení ke zlepšení kvality stravovacích služeb. Pro zpracování závěrečné práce byly použité metody analytické, srovnávací, výzkumní a dotazníkové šetření. Práce je rozdělená do tří části. V teoretické části je popsána podstata hotelové restaurace, pracovní pozice, jejích význam a další teoretické zásady pro bezproblémový chod restaurace. Druhá část je zaměřena na analýzu stravovacího úseku hotelu Pratol, kde je stručně popsaný ubytovací úsek a dále následuje analýza stravovacího úseku. Jsou popsány odbytové a výrobní středisko či také skladovací činnost podniku. Dále ve druhé části najdeme analýzu SWOT, analýzu jídelního lístku, kde je také popsán počet prodaných jídel za rok 2012 a měsíc duben roku 2013. Provedena analýza konkurence a webových podniku. Bylo provedeno dotazníkové šetření, které pomohlo při zjištění spokojenosti zákazníků restaurace. Na konci druhé části jsou stručně shrnuté odhalené problémy, které negativně ovlivňují provoz stravovacího úseku hotelu Pratol a ve třetí části jsou popsány navrhované opatření pro řešení problémů, které byly odhalené v části analytické.

Abstract:

This thesis is concerned with restaurant of the Pratol hotel*** in Říčany. Main aim of thesis is to research a food and beverage department of particular hotel, to reveal problematic sections of the restaurant and to suggest solutions for improvement in the quality of the catering service. For elaboration of thesis were used such methods as analytic, comparative, researching and questionnaire. Thesis is divided into three parts. Theoretical part consists of hotel restaurant essence description, definition of working positions and other theoretical principles for successful restaurant activity. Second part is based on analysis of the food and beverage department of Pratol hotel, where accommodation section is briefly described and analysis of the food and beverage department follows after. There are manufacturing and sales activities described as well as a storing activity of the company. There is a SWOT analysis to evaluate a menu, and the total amount of sold meals during 2012 and April 2013. Analysis of rivals and internet companies was executed. There is a questionnaire, which had helped to define the level of customers satisfaction. At the end of the second part of the thesis there are briefly summarized revealed problems, which negatively influence the food and beverage department activity. Third part includes suggestions to resolve problems that are revealed in the analytic part
