Abstract:

Bakalářská práce byla aplikována na podnik Pension – Restaurant Lovas & Lovas, který se nachází v Poděbradech. Cílem bakalářské práce je posoudit rozsah a úroveň kvality poskytovaných služeb v podniku a zhodnotit řízení kvality služeb. Dále vyhodnotit spokojenost zákazníků s kvalitou poskytovaných služeb a při zjištění záporného hodnocení, navrhnout možnosti správných kroků ke zlepšení. Práce se také zaměřuje na organizační strukturu daného podniku. Vedlejším cílem této práce je navrhnout určitá zlepšení v podniku, která by mohla vést ke zvýšení úrovně kvality poskytovaných služeb. Metody pro výzkum byly v práci použity: metoda dotazníkového šetření, kde byla sbírána primární data a dotazníky byly umístěny v restauraci, v pensionu a zasílány klientům na e-mail. Dále byla využita metoda mystery shoppingu na základě předem stanovených otázek a poslední metodou je pozorování celkového chodu podniku. Vyhodnocení dotazníků bylo velmi kladné. Z dotazníků je zřejmé, že většina zákazníků je spokojena například s kvalitou poskytovaných služeb, kvalitou pokrmů, obsluhou personálu nebo s pořádáním cateringových akcí. Názory se začaly rozcházet v komunikačních znalostech personálu, kde většina cizinců, navštěvující tento podnik, uváděla, že jazykové schopnosti personálu nejsou plně v pořádku. Proto v návrhové části uvádím, jak by mohli majitelé podniku tento nedostatek zlepšit, aby byli všichni navštěvující hosté podniku plně spokojeni. Dále bylo zjištěno ještě několik málo nedostatků, jejichž nápravu podrobně rozebírám v návrhové části. Pension – Restaurant Lovas & Lovas se zabývá poskytováním nadstandartních služeb a zaměřuje se převážně na business klientelu. Proto se majitelé podniku snaží udržovat celkovou kvalitu a neustále ji také zlepšovat.

Abstract:

The thesis was applied to a business called 'Pension – Restaurant Lovas & Lovas' located in Poděbrady. The primary aim of the thesis is to review the scope and level of quality of services provided by the establishment, assess the quality management within, evaluate the customer satisfaction with the quality of services and provide recommendations for improvements in cases of negative rating. The thesis also focuses on an organisational structure of the company itself. A secondary aim of the thesis is to suggest improvements in the company, which could lead to the overall betterment of services provided. The following research methods were used: a survey was used for gathering primary data – questionnaires were given to customers in the restaurant and the pension and also emailed directly to clients. A mystery shopping method was also used on the basis of predetermined questions. The last method applied was monitoring of the overall operations of the enterprise. The evaluation of the questionnaires was very positive. The survey results show that most customers are satisfied for example with the quality of services provided, the quality of food, the attention from the waiting staff as well as the catering events organised by the company. The feedback varied in the section of the survey regarding the staff’s language skills. The majority of foreign visitors rated the staff's language skills at a lower level. A suggestion on how to improve this flaw and therefore ensure overall customer satisfaction can be found in the 'Recommendations' Section. A correction of further shortcomings identified during observations is also discussed in the 'Recommendations' section of the thesis. 'Pension – Restaurant Lovas & Lovas' provides above-standard services and focuses mainly on business clientele; hence the owners of the establishment strive to maintain the overall quality and continually improve it.
