Antioxidant capacity of absinthes

Abstract:

Práce je rozdělena do dvou hlavních částí. První částí je literární rešerše, která je soupisem informací o antioxidantech, antioxidační kapacitě i aktivitě a o metodách měření antioxidační kapacity. Hlavní částí literární rešerše, je poté její část, jenž se věnuje absintům, jejich složení, výrobě a týkající se legislativě. Druhou částí práce je část praktická. Ta se zabývá jednotlivým měřením antioxidační kapacity absintů metodou FRAP a metodou DPPH. Získané hodnoty jsou poté vyhodnoceny a zaneseny do jednotlivých grafů i tabulek a patřičně slovně okomentovány.

Abstract:

My diploma thesis is divided into two major parts. The first part is the research of literature, which is a sum of information about antioxidants, the capacity, and activity of antioxidation and methods of measurement of antioxidation capacity. The main part of this research is then the part concerning absinthes, their ingredients, production, and legislation about absinthes. The second part of my work is the practical aspect of the measurement of the antioxidation capacity of absinthes. It deals with measurements of different absinthes using the FRAP and DPPH methods. Obtained figures are then evaluated and put into graphs and tables and then commentated.
