Wine Adulteration

Abstract:

Bakalářská práce na téma Falšování vín obsahuje rešerši literatury týkající se falšování vín, což představuje významný problém v potravinářském průmyslu s vínem. Cílem této bakalářské práce je poskytnou přehled o historickém vývoji této problematiky, předložit a popsat nejčastější metody falšování, charakterizovat klíčové látky, které jsou buď přidávány nebo upravovány ve víně, poskytnout aktuální přehled o poměrech v oblasti falšování vín v České republice, nastínit charakteristiku autenticity vín a uvést příklady s popisem nejčastějších současných analytických metod detekce falšování vín. Rešerše se také zabývá legislativními opatřeními a kontrolní činností odpovědných ústavů, které jsou zavedeny k ochraně spotřebitelů před falšováním vín.

Abstract:

The bachelor thesis on Wine Adulteration contains a literature search on the issue of wine adulteration, which is a significant problem in the wine food industry. The aim of this bachelor thesis is to provide an overview of the historical development of this issue, present and describe the most common methods of adulteration, characterize the key substances that are either added or modified in wine, provide an up-to-date overview of the wine adulteration situation in the Czech Republic, outline the characteristics of wine authenticity and provide examples with a description of the most common current analytical methods for detecting wine adulteration. The review also examines the legislative measures and control activities of the responsible institutes that are in place to protect consumers from wine adulteration.
