Influence of the intensity of defoliation of grape zones on the quality of grapes

Abstract:

Cílem bakalářské práce bylo zjistit, jaký vliv má intenzita odlistění zóny hroznů zejména na kvalitu, výnos a zdravotní stav hroznů. Praktická část této práce byla prováděna ve vinici známého Vinařství Sonberk. Bylo zde vyhrazeno 8 řádků odrůdy Sauvignon a 8 řádků Pálavy. Řádky byly odlistěné v různé intenzitě a také v odlišných termínech z každé z variant. Termíny defoliace byly v časovém rozmezí od 23. 6. do 18. 8. 2017. Rozbory v laboratoři probíhaly ve 3 termínech, a to 23. 8., 5. 9. a 14. 9. 2017.•Varianta 1 – odlistění ručně po odkvětu, odstraněny 2 listy a zálistky v zóně hroznů (23. 6. 2017 Sauvignon i Pálava)•Varianta 2 – odlistění ručně po odkvětu, odstraněny 4 listy a zálistky v zóně hroznů (23. 6. 2017 Sauvignon i Pálava)•Varianta 3 – odlistění ručně, odstraněny 2 listy a zálistky v zóně hroznů (12. 7. 2017 Sauvignon, 13. 7. 2017 Pálava)•Varianta 4 – odlistění ručně, odstraněny 4 listy a zálistky v zóně hroznů (12. 7. 2017 Sauvignon, 13. 7. 2017 Pálava)•Varianta 5 – odlistění ručně, odstraněny 2 listy a zálistky v zóně hroznů (13. 8. 2017 Sauvignon, 14. 8. 2017 Pálava)•Varianta 6 – odlistění ručně, odstraněny 4 listy a zálistky v zóně hroznů (13. 8. 2017 Sauvignon, 14. 8. 2017 Pálava)•Varianta 7 – kontrola, odstraněny pouze zálistky v zóně hroznů po odkvětu (4. 7. 2017 Sauvignon i Pálava)•Varianta 8 – odlistění ručně nad zónou hroznů (30 cm) – listy a zálistky, pro zpomalení zrání (18. 8. 2017 Sauvignon i Pálava)V průběhu zrání byly vyhodnoceny tyto kvalitativní parametry – hodnota pH, cukernatost, titrovatelné kyseliny a obsah asimilovatelného dusíku. V předsběrovém termínu byla také stanovena hustota hroznu, počet letorostů, počet hroznů a jejich hmotnost. Dále byla provedena senzorická analýza bobulí a další parametry spojené s odlistěním zóny hroznů. Konečné výsledky ukázaly, že nejvyšší cukernatost má u obou odrůd varianta číslo 7. Varianta číslo 7 měla titrovatelné kyseliny u odrůdy Sauvignon nejvyšší, ale naopak u odrůdy Pálava spadaly kyseliny do nižších hodnot. U této varianty se odstraňovaly pouze zálistky v zóně hroznů. Hodnoty byly posouzeny jako nejoptimálnější, ale ne vždy je parametr cukernatosti pokládán za nejdůležitější parametr kvality.

Abstract:

The aim of the Bachelor thesis was to define the effects the defoliation has on the quality, yield and on the vine health. The experiment was carried out in the Sonberk’s vineyards, where 8 rows of Sauvignon and Palava were supplied for the experiment. Every row had a different method of defoliation, which differed in the timing of removing leaves and in the rate of the defoliation. The time period of the defoliation ranged between the 23. 6. – 18. 8. 2017. The chemical analyses were conducted on the 23. 8., 5. 9. and on the 14. 09. 2017. •Sample 1 – defoliated manually after flowering. Removed 2 leaves in the cluster zone and lateral shoots. (23. 6. 2017 Sauvignon and Palava)•Sample 2 – defoliated manually after flowering. Removed 4 leaves in the cluster zone and lateral shoots (23. 6. 2017 Sauvignon and Palava)•Sample 3 – defoliated manually. Removed 2 leaves in the cluster zone and lateral shoots (12. 7. 2017 Sauvignon, 13. 7. 2017 Palava)•Sample 4 – defoliated manually. Removed 4 leaves in the cluster zone and lateral shoots (12. 7. 2017 Sauvignon, 13. 7. 2017 Palava)•Sample 5 – defoliated manually. Removed 2 leaves in the cluster zone and lateral shoots. (13. 8. 2017 Sauvignon, 14. 8. 2017 Palava)•Sample 6 – defoliated manually. Removed 4 leaves in the cluster zone and lateral shoots (13. 8. 2017 Sauvignon, 14. 8. 2017 Palava)•Sample 7 – control sample. Only lateral shoots in the cluster zone were removed after flowering. (4. 7. 2017 Sauvignon and Palava)• Sample 8 – defoliated manually leaves and lateral shoots above the cluster zone. To slow down the ripeness. During the ripening analytical parameters of the grapes such as pH, YAN, titratable acids and sugar content were measured. Before the harvest also was evaluated the density of grapes, amount of shoots, the number of grapes and their mass Later on the grapes were sensorially evaluated and other parameters connected to the defoliation of grapes were measured. The results showed that the highest sugar content had sample number 7 in both grape sorts. Sample 7 Sauvignon had the highest concentration of titratable acids but Palava’s titratable acids on the contrary were quite low. Within this sample only were lateral shoots in the cluster zone removed. The results were judged to be the best, but it is important to remember that the sugar content is not always the best indicator of the grapes quality.
