Influencing orange wines parameters different time periods of must maceration

Abstract:

Tato diplomová práce se zabývá tématem macerace oranžových vín. Zejména pak jak dlouhá macerace je pro oranžová vína nejvhodnější.Teoretická část se zabývala výrobou oranžových vín a jejich historií. Byla zde také uvedena výroba těchto vín z Gruzie, která je považována za průkopníka oranžových vín. Dále se věnovala maceraci, co to je a jaké látky se dají ze slupek a semínek do vína dostat. Byli zde uvedeny druhy macerace, jak jí lze ve vinařství aplikovat. V posledním podtématu teoretické části se zde popisují fenolické látky a jejich rozdělení.V experimentální části se ze začátku řešil dotazník, který byl vytvořený proto, aby se zjistilo, jak lidé hodnotí a znají oranžová vína. Poté přišla na řadu analytická analýza vína určeného na pokus. Jednalo se o srovnání dvou variant. Řešilo se, jak se postupem času macerace ve víně mění různé látky. V poslední experimentální části se řešilo senzorické hodnocení vína. Pro pokus byla použita stobodová hodnotící tabulka a aromatický profil vína.

Abstract:

This diploma thesis deals with a topic of maceration of orange wines. In particular, how long the maceration is most suitable for orange wines.The theoretical part deals with a production of orange wines and their history. There is also described the production of these wines from Georgia, which is considered a pioneer of orange wines. There is also description of maceration and what substances can be put into the wine from the skins and seeds. Also types of maceration and how it can be applied in viticulture, are listed. The last subtopic of the theoretical part describes phenolic substances and their groups.In the experimental part, a questionnare was created to find out how people evaluate and know orange wines. Then chemical analysis of the wine intended for the experiment is followed. It was a comparison of two variants. It was discussed how different substances in the wine change over time during maceration. In the last experimental part, the sensory evaluation of wine was carried out. A 100-point scoreboard and an aromatic wine profile were used for the experiment.
