Bioavailability of metals for root vegetables

Abstract:

Diplomová práce Biologická dostupnost kovů pro kořenovou zeleninu se zabývá přestupem rtuti z kontaminovaných zemědělských půd do kořenové zeleniny a zhodnocením zdravotního rizika vyplývajícího z konzumace zemědělsky významných plodin pěstovaných na kontaminovaných půdách. Teoretická část práce se věnuje charakteristice a toxicitě chemických forem rtuti, metodám stanovení frakcionace rtuti v půdě a transportem rtuti z půdy do rostlin se zaměřením na fytoakumulaci rtuti kořenovou zeleninou. V praktické části jsou shrnuty a diskutovány výsledky speciační a frakcionační analýzy půd a celkového obsahu rtuti ve vzorcích půd i kořenové zelenině (mrkvi, ředkvičce a červené řepě). Rtuť stanovená ve všech vzorcích byla přítomna pouze v anorganické formě (Hg2+), koncentrace methylrtuti byla pod mezí detekce (0,3 μg/kg). Mezi půdami z lokality historické těžby cinabaritu a kontrolní půdou byl pozorován statisticky významný rozdíl v celkovém obsahu rtuti (p < 0,05). Obsah rtuti ve většině vzorků půd z bývalé těžební oblasti překračoval maximální povolený limit (0,3 mg/kg Hg) stanovený vyhláškou Ministerstva životního prostředí č. 153/2016. Kořenová zelenina akumulovala rtuť především v sekundárních kořenech, které jsou během posklizňové úpravy odstraňovány. Celkový obsah rtuti ve zdužnatělých kořenech byl statisticky významně nižší (2–14x, p < 0,0001) než v sekundárních kořenech. V České republice je průměrná spotřeba kořenové zeleniny velmi nízká (20 kg/osoba/rok), proto hodnoty cílového kvocientu nebezpečí (THQ) naznačují, že by konzumace kořenové zeleniny pěstované na kontaminovaných půdách neměla mít nepříznivý vliv na zdraví spotřebitelů. Spotřeba zeleniny vyšší než 240 g/osobu/den by již mohla představovat potenciální negativní vliv na zdraví spotřebitelů.

Abstract:

The diploma thesis Bioavailability of metals for root vegetables deals with the transfer of mercury from contaminated agricultural soils to root vegetables and the evaluation of the health risk resulting from the consumption of agriculturally important crops grown on contaminated soils. The theoretical part deals with the characteristics and toxicity of chemical forms of mercury, the methods for determining the fractionation of mercury in the soil and the transport of mercury from soil to plants with a focus on phytoaccumulation of mercury by root vegetables. The practical part summarizes and discusses the results of speciation and fractionation analysis of soils and total mercury content in soil samples and root vegetables (carrots, radishes, and beets). The mercury determined in all samples was present inorganic form (Hg2+) only, the concentration of methylmercury was below the limit of detection (0.3 μg/kg). A statistically significant difference in the total mercury content was observed between soils from the site of historical cinnabar mining and control soils (p < 0.05). The mercury content in most soil samples from the former mining area exceeded the maximum permitted limit (0.3 mg/kg Hg) set by Decree of the Ministry of the Environment No. 153/2016. Root vegetables have accumulated mercury mainly in the secondary roots, which are removed during post-harvest treatment. The total mercury content in the swollen storage taproots was statistically significantly lower (2–14x, p < 0.0001) than in the secondary roots. In the Czech Republic, the average consumption of root vegetables is very low (20 kg/person/year), therefore the values of the target hazard quotient (THQ) suggest that the consumption of root vegetables grown on contaminated soils should not adversely affect consumer health. Consumption of vegetables higher than 240 g/person/day could already have a potential negative impact on consumer health.
