Abstract:
Bakalářská práce shrnuje v teoretické části poznatky o procesu lipoperoxidace při kterém vznikají ALEs, o jejich prekurzorech a jednotlivých látkách. Jsou zde identifikované potraviny, ve kterých se tyto látky vyskytují. Dále jsou zde popsány onemocnění, které jsou dávány do souvislosti s těmito látkami. The bachelor´s thesis summarizes the theory of knowledge about the process by which lipid peroxidation produced ALEs. Next speak about their precursors and about individual substances.
