Abstract:
Práce se zabývá stanovením závislosti obsahu relativní rovnovážné vlhkosti na aktivitě vody pro vzorky obalového materiálu na bázi bílkovin při teplotách 5, 25 a 40 °C statickou gravimetrickou metodou. Závislost relativního obsahu vlhkosti na aktivitě vody byly popsány různými matematickými modely adsorpčních izoterem, jejichž parametry jsou získány pomocí nelineární a lineární regrese. Abstract:
This work is focused on determination of moisture adsorption isotherms for food package based on proteins at 5, 25 and 40 °C using static gravimetric method. The relationship of equilibrium moisture content on water activity of the samples was described by different mathematical models for the adsorption isotherms, and the parameters were computed using nonlinear and linear regression technique.
