Reduction of food waste in the hospitality industry

Abstract:

Tato bakalářská práce se zabývá analýzou vybrané restaurace v závislosti na omezování potravinových odpadů. Cílem práce je detailní průzkum nakládání s potravinami ve vybrané restauraci Restaurant & Bar N°10, identifikace vzniklých odpadů a jejich způsob zpracování. V teoretické části jsou představeny základní pojmy, jako je gastronomie, hygiena ve stravovacích službách, environmentální management a vznik odpadu v pohostinství. Zároveň jsou zde také popsány studie zaměřující se na nakládání s odpady. V praktické části je analyzována vybraná restaurace Restaurant & Bar N°10. Jsou zde rozebrány jednotlivé způsoby, jakými restaurace nakládá s odpady. Pro analýzu restaurace je použita metodická příručka „Food waste“ pro členy Asociace hotelů a restaurací, jejímž nástrojem je hierarchie nakládání s odpady. Dochází k detailnímu popisu vzniklých odpadů u třech vybraných pokrmů od jejich nákupu po jejich přípravu. Podle výsledků z praktické části jsou navrženy možnosti zlepšení nakládání s odpadem v restauraci Restaurant & Bar N°10.

Abstract:

This Bachelor‘s Dissertation deals with analysis of chosen restaurant regarding reduction of food waste. The aim is detailed analysis of food waste management in the Restaurant & Bar N°10, mainly focused on identification of food waste and food processing. First part introduces basic concepts such as gastronomy, hygiene in catering facilities, environmental management and generation of waste in hospitality industry. Moreover, there are included studies focused on waste management. Second part analyses the chosen restaurant Restaurant & Bar N°10. There are shown different ways how the restaurant deals with food waste and waste itself. The methodological manual „Food Waste“ for members of Association of hotels and restaurants, is used for the restaurant analysis. The Hierarchy of waste management is served for detailed analysis. In addition, there are chosen three meals which are introduced in detailed form in regards to generated waste within whole process, from purchase to preparation. Based on the results of analysis, there are suggested new ways how to improve the food waste management of Restaurant & Bar N°10.
