Traditions and Present of Town Breweries in the Ústí Region

Abstract:

Rozvoj měst byl v historii provázán s vývojem jejich hospodaření. Proto byla zejména ve středověku velmi důležitá privilegia, udělovaná panovníkem a která umožňovala provozovat určité výrobní nebo obchodní činnosti. V českých městech hrálo významnou roli právo várečné (právo vařit pivo) a právo výčepní (právo pivo čepovat). Tradice pivovarnictví některých měst se dochovala do dnešní doby a mnohá z nich se díky této hospodářské činnosti stala světově proslulá – Plzeň, České Budějovice, Žatec a nelze vynechat ani samotnou Prahu. V současné době se stávají trendem malé pivovary, jejichž činnost je zpravidla vázána na jedinou restauraci. Cílem této bakalářské práce je historická analýza rozvoje pivovarnictví v jednotlivých etapách rozvoje městské správy v Čechách a současného stavu tohoto resortu na našem území.

Abstract:

The development of towns has been linked in the history with the development of their economy. Therefore, especially in the Middle Ages, the privileges granted by the sovereign were very important, allowing the pursuit of certain production or commercial activities. In Czech towns, the brewing right (the right to brew beer) and the tapping right (the right to draft beer) played an important role. The brewing tradition of some towns has been preserved to this day and many of them have become world-famous thanks to this economic activity - Pilsen, České Budějovice, Žatec and Prague itself cannot be omitted. Nowadays, small breweries are becoming a trend and their activities are usually tied to a single restaurant. The aim of this thesis is a historical analysis of the development of brewing in individual stages of the development of the city administration in Bohemia and the current state of this department in our country.
