Effect of yeast on glutathione content

Abstract:

Tato práce se zabývá vlivem různých kmenů kvasinek na obsah glutathionu ve víně. Literární část je věnována glutathionu jako takovému, fenolickým látkám, aromatickým látkám, a kvasinkám. Jsou zde popsány charakteristiky jednotlivých témat, jejich rozdělení, vznik a metabolismus. Experimentální část je nejprve zaměřena na charakteristiku zvolené odrůdy a popis kvasinek a bakterií, které byly v pokusu využity. Poté následuje náhled experimentu a metody stanovení základních analytických parametrů. Ve výsledkové části je analytické stanovení jednotlivých fenolických a aromatických látek, společně s grafickým zpracováním. Klíčová slova Glutathion, kvasinky, mléčné bakterie, fenolické látky

Abstract:

This work investigates the effect of different yeast strains on the glutathione content of wine. The literature part is devoted to glutathione per se, phenolic substances, aromatic substances, and yeasts. The characteristics of each topic, their distribution, origin and metabolism are described. The experimental part first focuses on the characteristics of the chosen variety and a description of the yeasts and bacteria used in the experiment. This is followed by a preview of the experiment, methods for determining the basic analytical parameters. In the results section, the analytical determination of individual phenolic and aromatic substances is presented, together with a graphical presentation.
