The creation of teaching materials for distance learning vocational training in the field of chef and waiter

Abstract:

Zadaná diplomová práce se zabývá problematickou výuky odborného výcviku v distanční formě vyučování. Reaguje tak na uplynulé události ohledně epidemie Covid 19, kdy byla výuka na všech školách vedena právě touto formou. Práce předkládá popis s využití vybraných výukových metod, které by mohly nedostatky distanční výuky kompenzovat. Pro zjištění názoru žáků na distanční odborný výcvik byl vytvořen kvantitativní dotazník, jehož výsledky byly zohledněny v tvorbě výukových materiálů pro zmíněné účely. Práce se soustředí na vybraný středoškolský obor kuchař-číšník. Výukové materiály využívají aktivizační metodu didaktické hry, obrácené výuky a názorně demonstrační prostředek výukového videa. Materiály byly implementovány ve výuce žáků Střední školy Bohumín. Následně byla ověřena jejich účinnost pomocí pre-testů a post-testů, včetně evaluační části. Statistické vyhodnocení tohoto testování prokázalo, že u žáků došlo k velice pozitivním změnám, lze tedy tyto materiály považovat za účelné a mohou být přínosem pro další potencionální situaci, ve které by prezenční vyučování bylo znemožněno.

Abstract:

The assigned diploma thesis deals with the issue of teaching vocational training in the distance form of teaching. It is thus responding to recent events regarding the Covid 19 epidemic, when teaching in all schools was conducted in this form. The thesis presents a description using selected teaching methods that could compensate for the shortcomings of distance learning. A quantitative questionnaire was created to find out the students' opinion on distance vocational training, the results of which were taken into account in the creation of teaching materials for the aforementioned purposes. The work is focused on the selected high school subject of chef-waiter. The teaching materials use the activation method of the didactic game, flipped teaching and the illustrative demonstration tool of the teaching video. The materials were implemented in the teaching of Bohumín Secondary School pupils. Finally, their effectiveness was verified using pre-tests and post-tests, including the evaluation part. The statistical evaluation of this testing showed that there were very positive changes in the students, so these materials can be considered useful and can be beneficial for another potential situation in which face-to-face teaching would be impossible.
