Content of long-chain polyunsaturated fatty acids (LC PUFA) n-3 in selected product based on meat of pigs fed a diet supplemented with fish oil

Abstract:

Diplomová práce je rozdělena na teoretickou a praktickou část. Teoretická část pojednává o polynenasycených mastných kyselinách s dlouhým řetězcem (PUFA LC). Dále se zaměřuje na fortifikaci potravin rybím olejem. V praktické částí je pojednáván experiment, ve kterém jsou stanoveny obsahy mastných kyselin v mg/100 g výrobku za použití plynové chromatografie. Pro pokus bylo použito 12 (samic) prasat hybridního Large White (50 %) a Landrase (50 %), která byla krmena standardní krmnou směsí obohacenou o 8 % rybího oleje. Pro experiment byly použity receptury vídeňských párků a boloňských salámů vyrobených z masa prasat krmených standardní krmnou směsí (K), resp. masa prasat krmených obohacenou krmnou směsí o 8 % rybího oleje (P). Porovnání výsledků proběhlo za pomoci statistického zpracování, naměřené rozdíly výsledků jsou mezi sebou porovnány. Z výsledků našeho experimentu vyplývá, že fortifikace krmné směsi o 8 % rybího oleje u vyrobených masných výrobků zvýšila (p < 0,05) obsah EPA, DHA a DPA.

Abstract:

The diploma thesis is divided into theoretical and practical part. The theoretical part deals with long chain polyunsaturated fatty acids (PUFA LC). We also focus on food fortification with fish oil. The practical part is experiment in which it is examinated the content of fatty acids in mg / 100 g of product is determined using gas chromatography. Twelve (female) pigs of hybrid Large White (50%) and Landrase (50%) were used for the experiment, which were fed a standard feed mixture enriched with 8% fish oil. Recipes of Viennese sausages and Bolognese sausages made from pig meat fed a standard compound feed (K), resp. meat of pigs fed with an enriched compound feed with 8% fish oil (P). The results were compared with the help of statistical processing, the measured differences in the results are compared with each other. The results of our experiment show that fortification of feed mixtures with 8% fish oil in manufactured meat products contains increases (p <0.05) content of EPA, DHA and DPA
