The Role of Chocolate in Modern Gastronomy

Abstract:

Bakalářská práce je zpracovaná na téma Postavení čokolády v současné gastronomii. Hlavním cílem práce je analyzovat možnosti využití čokolády v gastronomii, konkrétně spojení čokolády s alkoholem, slanými pokrmy a dezerty. Tato práce je rozdělena na tři části: teoretická, analytická a návrhová část. Teoretická část se stručně zabývá pěstováním kakaa a výrobou čokolády, legislativou, spotřebou čokolády v České republice a vývojem ceny kakaa. Rozsáhleji je popsána čokoláda v gastronomii v kapitolách párování čokolády, čokoláda jako nápoj, čokoláda a alkohol, čokoláda ve slaném pokrmu, čokoláda v cukrářské výrobě a netradiční podoby čokolády. V analytické části je popsán cíl práce a je využito dotazníkové šetření. Pro naplnění cíle byly stanoveny dvě výzkumné otázky: Jak respondenti hodnotí využití čokolády v současné gastronomii, jaké jsou jejich preference a jak čokoládu využívají? Jak využívají čokoládu gastronomická zařízení na Příbramsku? Následně byla data z dotazníkových šetření analyzována a byla uskutečněna komparace a syntéza. Zjištění, které z dat vyplývá je, že konzumenti dávají stále přednost sladkým variantám čokolády před netradičními kombinacemi a gastronomické podniky na Příbramsku nabízejí převážně sladké čokoládové pokrmy, o které mají zákazníci zájem. V návrhové části jsou navržené kroky, jak dostat do povědomí i jiné a netradiční kombinace čokolády.

Abstract:

This bachelor thesis covers the theme of chocolate in contemporary gastronomy. The main aim of this work is to analyse the ways how to use chocolate in gastronomy, particularly the combination of chocolate and alcohol, savoury meals and desserts. The work is divided into three parts; theoretical, analytical and proposal part. The theoretical part briefly deals with the cultivation of cocoa, the production of chocolate, legislation and chocolate consumption in the Czech Republic and also with the development of cocoa price. There is described the use of chocolate in gastronomy in the chapters of chocolate combination, chocolate as drink, chocolate and alcohol, chocolate in savoury meals, chocolate in confectionery and also the unconventional forms of chocolate. The analytical part describes the aim of this work and there was used the investigation questionnaire there. These research questions were given to reach the goals: How do the respondents evaluate the usage of chocolate in contemporary gastronomy, what are their preferences and how do they use chocolate? How do the gastronomic facilities around Příbram use the chocolate? The gained facts from the questionnaire were consequently analyzed and then the synthesis and comparison were done. The result is that the consumers prioritize the sweet versions of chocolate to unusual combination. The gastronomic places around Příbram mainly offer sweet chocolate meals which are requested by their customers. The last part of this work proposes the steps to get the other and unconventional chocolate combination into public awareness.
