The production of macerate and liqueur beverages

Abstract:

Tato diplomová práce se zabývá výrobou macerátů a likérů z ovocných surovin. Maceráty byly vyrobeny z josty, rakytníku, ostružin a trnek. Likéry byly vyrobeny z angreštu, lesních a zahradních jahod, meruněk, červeného rybízu a višní. Teoretická část práce se zabývá charakteristikou vybraných ovocných druhů, definicí likérů a macerátů a samotného technologického popisu jejich výroby. U všech výrobků bylo provedeno analytické a senzorické hodnocení. Analytické hodnocení bylo rozděleno na 3 části – hodnocení vstupních surovin, analýza macerátů a analýza hotových likérů. V rámci analytického hodnocení byly stanoveny tyto parametry: obsah titrovatelných kyselin, rozpustná sušina, obsah celkových polyfenolů a obsah kyseliny jablečné, askorbové a citronové. Při senzorickém hodnocení vyrobených likérů a macerátů byly postupně ohodnoceno 7 parametrů: čistota vůně, intenzita ovocné vůně, harmonie vůně, ovocný charakter chuti výrobku, harmonie chuti, kvalita dochuti a celkový dojem z výrobků. Nejlépe senzoricky ohodnoceným výrobkem byl likér z lesních jahod a nejhůře hodnoceným byl macerát z josty.

Abstract:

The diploma thesis is focused on production of maceration and liqueur beverages made from fruit. Macerates were prepared from jostaberry, blackberries and blackthorn. Liqueurs were prepared from gooseberries, forest and garden strawberries, apricots, red currant and cherries. Theoretical part of thesis is focused on characterization of these chosen fruit species, definition of liqueurs and macerated beverages and technological process of production. All products were analytically and sensory analysed. Analytical analyses were separated into 3 parts – analyses of fresh fruit, analyses after maceration and analyses of prepared liqueurs. In analytical analyses were researched there parameters: total titratable acids content, soluble dry matter, total polyphenols content, malic acid, citric acid and ascorbic acid. During sensory analyses of prepared liqueurs and macerated beverages were graded 7 parameters: purity of flavour, intensity of fruit flavour, harmony of flavour, characterful fruit taste in product, harmony of taste, quality of aftertaste and total impression of product. The highest valuation was given to liqueur prepared from forest strawberries and lowest valuation was given to macerated jostaberry.
