Tématem této diplomové práce bylo sledování vlivu obsahu oxidu siřičitého na oxidaci bílých vín. Teoretická část práce popisuje chemické složení a technologické postupy používané při výrobě bílých vín. V praktické části bylo analyzováno 8 vzorků, s rozdílným obsahem celkového oxidu siřičitého, u kterých byl sledován v průběhu skladování obsah volného oxidu siřičitého jodometricky. The subject of this thesis was the influence of sulphur dioxide content on the oxidation of white wines. The theoretical part of the thesis describes the chemical composition and technological procedures used in the production of white wines.
