The Project Proposal of an Operating Manual for a Company Providing Catering and Hotel Services

Abstract:

Diplomová práce řeší projekt návrhu provozní příručky podniku poskytující restaurační a hotelové služby. Do této podoby byla provozní příručka navržena díky prostudování odborné literatury a provedení ekonomických analýz, analýzy současné úrovně řízení, PESTE analýzy, SWOT analýzy a následně pak především analýzy jednotlivých provozních příruček a manuálů odlišných restaurací a hotelů, díky nimž byly do navrhované provozní příručky začleněny jen ty nejdůležitější informace. Součástí projektu byla navržena provozní příručka pro provozovnu Baltaci Original Restaurant obsahující informace týkající se jednotlivých částí (především administrativní část, ubytovací část, housekeeping a F&B úsek) a také manuály pro jednotlivé pracovní pozice. Význam této provozní příručky byl identifikován v přehlednosti důležitých informací, díky níž by mělo dojít k úspoře času ředitele při řešení běžných záležitostí. Následně význam manuálů jed-notlivých pozic byl shledán v lepší informovanosti zaměstnanců o svých povinnostech. Díky Manuálu "recepce" Penzionu Baltaci Starý zámek, by mělo dojít i ke zkvalitněníslužeb ubytování. Celkově byla provozní příručka včetně manuálů zhodnocena jako přínosná pro Baltaci Original Restaurant i Penzion Baltaci Starý zámek.

Abstract:

This thesis is solving the design project of the operations manual for a business providing catering and hotel services. This current form of this operating manual was achieved thanks to in depth studies of expertise literature as well as performing economic analysis, the analysis of the current level of management, PESTE analysis, and SWOT analysis. Furthermore, the analysis of various operating manuals and polices and procedures of various restaurants and hotels were also performed and thanks to this only the most important and relevant information was included in this proposed operations manual. As part of this project an operating manual for The Baltaci Original Restaurant was created and suggested. It contains information regarding its individual sections, mainly adminis-tration, accommodation, housekeeping, and the Food & Beverage sector, as well as detai-led manuals for individual positions. The importance of this operating manual has been identified in the clarity of important information due to which there should be a time sa-ving factor for the director in solving common issues. Subsequently, further significance of this operation manual is found by the employees themselves by providing them with the clarity of information regarding their duties. Thanks to the specific operating manual for the reception part of The Baltaci Old Castle Guesthouse the accommodation services of this part of the business are also expected to improve. Overall, this polices and procedures manual which includes the operating manual was assessed and deemed as highly beneficial for The Original Restaurant Baltaci and The Baltaci Old Castle Guesthouse.
