Chocolate as one of the preferred foods

Abstract:

Tato bakalářská práce se ve své teoretické části zaměřuje na úvod do historie čokolády od začátku používání kakaových bobů ve výživě až po zakládání čokoládoven na území České republiky. Dále se v práci nachází legislativa týkající se označování čokoládových výrobků. Jsou zde vymezeny všechny druhy čokolády a výrobky, které se z nich vyrábějí. Největší část práce je věnovaná výrobě čokolády, jakým procesům při nich dochází, a jaké mohou vzniknout vady při nesprávném postupu. Poslední kapitola teoretické části je věnovaná vlivům čokolády na lidské zdraví a psychiku. V kapitole jsou rozepsány vitamíny, minerály a další tělu prospěšné látky, které čokoláda obsahu. Mimo jiné kapitola obsahuje i negativní vliv konzumace čokolády na zdraví. V praktické části bakalářské práce zjišťuje, za pomoci dotazníkového šetření, preferenci dotazovaných studentů k jednotlivým druhům a formám čokolády. Vyhodnocuje preference v daných oblastech konzumace čokolády, od druhu přes náplň a ingredience, obal až po cenu a kvalitu.

Abstract:

This bachelor thesis focuses on the introduction to the history of chocolate from the beginning of the use of cocoa beans in nutrition to the setting up of chocolate factories in the territory of the Czech Republic. In addition, there is legislation on labeling chocolate products. All types of chocolate and the products made from chocolate are defined here. The core of the thesis is about making chocolate, what processes are used, and what defects can occur if the process is wrong. The last chapter of the theoretical part is devoted to the effects of chocolate on human health and psyche. In the chapter terms, such as vitamins, minerals and other body beneficial substances that chocolate contains are defined here. Among other things, the chapter also includes the negative effect of chocolate consumption on health. In the practical part of the bachelor thesis, the questionnaire survey determines the preference of the respondents to the individual chocolate types and forms. It evaluates preferences in specific areas of chocolate cosumtion, taking into consideration the type ingredients, packaging , price and quality.
