Service Quality Management in Gastronomy

Abstract:

Předmětem bakalářské práce je komparace dvou italských restauracích ve dvou odlišných zemích, kde porovnávané země jsou Velká Británie a Česká republika. Konkrétně se jedná o restaurace Italian Restaurant Prezzo Torquay a Pizzeria Primavera. Prostřednictvím těchto dvou restaurací bylo poukázáno na odlišnosti řešení managementu kvality uvnitř podniku. Teoreticko-metodologická část se zabývá způsobem řízení kvality v podniku. Na začátku je vysvětlena problematika kvality služeb a řízení kvality služeb v podniku. Hodnocení kvality a spokojenosti je konkrétně popsáno na aplikování Gap analýzy – technikou SERVQUAL. Následuje kapitola Koncepce managementu kvality, kde jsou přístupy k ní, shrnuty na příkladech ISO norem, odvětvových standardech a komplexním managementu kvality (TQM). V analytické části je již samotný výzkum, který byl proveden ve čtyřech krocích. První tři výzkumy byly analýza obou restaurací, mystery shopping a rozbor recenzí, jejichž výsledky byly následně mezi sebou porovnány. Posledním výzkumem je již samotná Gap analýza provedená technikou SERVQUAL, kde byly zjištěny rozpory mezi očekáváním zákazníků a představami managementu. Následné výsledky z výzkumu byly shrnuty a v návrhové části byly navrženy doporučení na zlepšení konkrétních aspektů pro majitele/manažery obou podniků.

Abstract:

The goal of this bachelor thesis is to compare two Italian restaurants in two different countries, specifically the United Kingdom and the Czech Republic. The chosen restaurants are Italian Restaurant Prezzo Torquay and Pizzeria Primavera. Different ways of dealing with the service quality management inside a company was demonstrated using these two restaurants as an example. The theoretical section follows up the common methods of quality management used in companies. At the beginning, the issue of quality of service and its managing in companies is described. The evaluation of quality is explained on SERVQUAL model using the Gap analysis. It is followed by the chapter Quality Management Concept, where its approaches are summed up in the example of ISO standards, HACCP and Total Quality Management (TQM). The analytical section consists of the research itself, which was done in in four steps. The first three researches included analysis of both of the restaurants, mystery shopping and analysis of reviews on the internet. The results were then compared. The last research was Gap Analysis using the SERVQUAL model, where the gaps between management and clients’ perception of attributes of the restaurant were determined. The results were summed up and then, in the proposal section, the recommendations for improvement of specific aspects were suggested for the managers / owners of the restaurants.
