Traditional dishes of Chodsko and Plzeňsko

Abstract:

Tématem Bakalářské práce jsou tradiční pokrmy Chodska a Plzeňska. Úkolem bylo přiblížit tyto tradiční pokrmy Chodska a Plzeňska a popsat jejich historii, ale také ze kterých ingrediencí jsou tato jídla připravovaná. Cílem práce je zjistit, zdali by byl zájem o zařazení těchto tradičních pokrmů do nabídky stravování Street food. V první části se práce zabývá teorií, kde jsou definovány základní pojmy a souvisloti spojené s tématem. Informace jsem sbírala z historických dokumentů a odborné literatury, která se zabývá právě touto oblastí. V analytické části jsou pospány vybrané tradiční pokrmy a je praktikován jako první výzkum založený na metodě dotazníkového šetření. V druhé části analytické části jsem provedla komparaci jídelních lístků deseti restaurací z Chodska a Plzeňska. Zde bylo úkolem zjistit, v jaké míře se zařazují tradiční pokrmy Chodska a Plzeňska do jídelních lístků daných restaurací.

Abstract:

The topic of the bachelor thesis is traditional dishes of Chodsko and Plzeňsko. The task was to approach these traditional dishes of the Chodsko and Plzeň regions and to describe their history, but also from which ingredients these dishes are prepared. The aim of the thesis is to find out whether there would be an interest in including these traditional dishes in the Street food menu. The first part deals with the theory, where the basic concepts and contexts associated with the topic are defined. I gathered information from historical documents and professional literature that deals with this area. The analytical part describes selected traditional dishes and is practiced as the first research based on the method of questionnaire survey. In the second part of the analytical part, I performed a comparation of the menus of ten restaurants from Chodsko and Plzeňsko. The task here was to find out to what extent the traditional dishes of the Chodsko and Plzeň regions are included in the menus of the given restaurants.
